- Heat one tablespoon of your favorite oil in a largly-sized skillet over medium-high heat on the stovetop. Add beaten eggs and scramble until cooked. Remove from skillet and set aside.
- Add the remaining oil to the skillet and add the onions and carrots. Cook until tender, about 5 minutes.
- Add the minced garlic and cook on medium heat for one minute.
- Add the rice and stir to combine with the vegetables.
- Stir in the peas and cooked eggs.
- Add the soy sauce and oyster sauce (if used) and combine. Cook for a few more minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot, and enjoy!
