Ingredients
  

  • 1 large egg
  • tbsp Dijon mustard
  • 1 tbsp white wine vinegar
  • ½ tsp Kosher salt
  • 1 cup grapeseed oil or canola
  • 1 tsp fresh lemon juice

Method
 

  1. Add egg to a bowl inside a food processor. Blend for 20 seconds, add in mustard, vinegar, and salt. Blend for 30 seconds.
  2. Scrape sides and blend slowly while adding a ¼ of the oil.
  3. The mixture will then thicken, continue to process while adding oil slowly.
  4. Taste mayonnaise, season with more salt if needed, add in lemon juice.
