  4. Once the pasta is cooked, drain it and add it to the pan with the pancetta or guanciale. Add the reserved pasta water to the pan and toss everything together.
  5. Pour the egg and cheese mixture over the pasta, and toss everything together quickly to coat the pasta in the sauce. The heat from the pasta and the pan should cook the eggs, creating a smooth, silky sauce.

2 tablespoons butter

1 onion, diced

2 garlic cloves, minced

1 tablespoon grated ginger

1 cup tomato puree

1 cup heavy cream

Chopped fresh cilantro for garnish (optional)


  1. In a large bowl, combine the chicken, yogurt, lemon juice, garam masala, turmeric, cumin, paprika, salt, and cayenne pepper (if using). Mix well and marinate for at least 1 hour or overnight.
