Chili Without Beans Recipe

Ingredients
  

Chili
  • 2 tbsp olive oil
  • 2 lbs. Halal ground beef
  • 1 red onion diced
  • 1 green bell pepper diced
  • 28 oz diced tomatoes 1 can, undrained
  • 2 cups beef broth
  • 2 bay leaves
  • salt and ground black pepper
Seasoning Mix
  • 5 cloves garlic (4 Tbsp.) minced
  • 2 tbsp chili powder
  • 2 tsp onion powder
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 6 oz tomato paste 1 can

Method
 

  1. Heat oil in a pot over medium-high heat.
  2. Add ground beef to pot, season with salt & pepper, cook until brown. Crumble beef with spatula.
  3. Add onions, bell pepper, and garlic to the pot with browned beef.
  4. Cook for 4 minutes or until the vegetable are softened.
  5. Stir in chili powder, onion powder, cumin, dried oregano, and paprika.
  6. Add tomato paste, stir to combine and cook for 4 minutes.
  7. Stir in diced tomatoes.
  8. Stir in beef broth, scrape the bottom of the pot to stir.
  9. Add bay leaves and bring chili to simmer. Reduce heat and continue to simmer for 30 minutes. Stir occasionally.
  10. Remove from heat, remove bay leaves, and add salt & pepper to taste.
  11. Serve.
  12. Optional: Garnish with cheese, sour cream, or cilantro.
