Method
- Heat oil in a pot over medium-high heat.
- Add ground beef to pot, season with salt & pepper, cook until brown. Crumble beef with spatula.
- Add onions, bell pepper, and garlic to the pot with browned beef.
- Cook for 4 minutes or until the vegetable are softened.
- Stir in chili powder, onion powder, cumin, dried oregano, and paprika.
- Add tomato paste, stir to combine and cook for 4 minutes.
- Stir in diced tomatoes.
- Stir in beef broth, scrape the bottom of the pot to stir.
- Add bay leaves and bring chili to simmer. Reduce heat and continue to simmer for 30 minutes. Stir occasionally.
- Remove from heat, remove bay leaves, and add salt & pepper to taste.
- Serve.
- Optional: Garnish with cheese, sour cream, or cilantro.
