Method
- Scrub and soak sweet potato fries in cold water for 30 minutes.
- Heat oven to 450 degrees Fahrenheit.
- Line two baking sheets with aluminum foil. Slide them into the oven so they become hot.
- Slice your fries into 1/4-1/2 inch sticks. Put them into a large bowl and toss with olive oil, salt, and pepper.
- Put the sweet potatoes onto hot baking sheets and spread into one layer. Do not over crowd them or they will not brown.
- Bake fries for 15-25 minutes. Turn once and rotate the sheets for an even bake. Bake until the edges are lightly browned and centers are tender.
- Sprinkle fries with salt on top and serve.
