Ingredients
  

Cilantro Sauce
  • ½ cup cilantro leaves packed
  • ¼ cup oil
  • ¼ cup water
  • cup green onions chopped
  • ¾ tsp salt
  • 3 limes freshly squeezed
  • ½ cup Greek yogurt
  • 3 cloves garlic
Shrimp
  • ¾ lb. shrimp tails removed
  • 2 cups purple cabbage shredded
  • 4 corn tortillas
  • 1 avocado sliced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp cayenne pepper
  • tsp sea salt

Method
 

  1. Place all cilantro sauce ingredients in a blender and pulse until finely chopped.
  2. Toss together the cabbage and cilantro leaves to make a slaw. Add some sauce from above.
  3. Add shrimp to a bowl, mix in cumin, chili powder, onion powder, garlic powder, cayenne pepper, and sea salt.
  4. Heat a skillet with oil over medium heat. Add shrimp and cook for 5-6 minutes, or until browned.
  5. Remove shrimp, and heat tortillas until desired crispiness.
  6. Assemble your taco with avocado slices, sauce, and slaw.
