Ingredients
Cilantro Sauce
- ½ cup cilantro leaves packed
- ¼ cup oil
- ¼ cup water
- ⅓ cup green onions chopped
- ¾ tsp salt
- 3 limes freshly squeezed
- ½ cup Greek yogurt
- 3 cloves garlic
Shrimp
- ¾ lb. shrimp tails removed
- 2 cups purple cabbage shredded
- 4 corn tortillas
- 1 avocado sliced
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp onion powder
- ½ tsp garlic powder
- ½ tsp cayenne pepper
- 1½ tsp sea salt
Instructions
- Place all cilantro sauce ingredients in a blender and pulse until finely chopped.
- Toss together the cabbage and cilantro leaves to make a slaw. Add some sauce from above.
- Add shrimp to a bowl, mix in cumin, chili powder, onion powder, garlic powder, cayenne pepper, and sea salt.
- Heat a skillet with oil over medium heat. Add shrimp and cook for 5-6 minutes, or until browned.
- Remove shrimp, and heat tortillas until desired crispiness.
- Assemble your taco with avocado slices, sauce, and slaw.
