If I’m making a big batch of the Mexican Shrimp Taco Dip, and I was planning on having two tacos per person, it takes about 10-12 shrimp (or 10-12 small, boiled shrimp) to equal 1 cup of cooked shrimp. If I’m making a half batch of the dip, it only takes 6-8 shrimp to equal 1 cup of shrimp. Making a quarter batch takes 3-4 shrimp to equal 1 cup of shrimp if I’m making a quarter batch.

So… a single one-pound cooked shrimp serves about 12 tacos.

Ingredients

Cilantro Sauce

  • ½ cup cilantro leaves packed
  • ¼ cup oil
  • ¼ cup water
  • cup green onions chopped
  • ¾ tsp salt
  • 3 limes freshly squeezed
  • ½ cup Greek yogurt
  • 3 cloves garlic

Shrimp

  • ¾ lb. shrimp tails removed
  • 2 cups purple cabbage shredded
  • 4 corn tortillas
  • 1 avocado sliced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp cayenne pepper
  • tsp sea salt

Instructions

  • Place all cilantro sauce ingredients in a blender and pulse until finely chopped.
  • Toss together the cabbage and cilantro leaves to make a slaw. Add some sauce from above.
  • Add shrimp to a bowl, mix in cumin, chili powder, onion powder, garlic powder, cayenne pepper, and sea salt.
  • Heat a skillet with oil over medium heat. Add shrimp and cook for 5-6 minutes, or until browned.
  • Remove shrimp, and heat tortillas until desired crispiness.
  • Assemble your taco with avocado slices, sauce, and slaw.
