Ingredients
  

  • 1 lb elbow pasta
  • ½ cup unsalted butter
  • ½ cup all purpose flour
  • 1 cup whole milk
  • 2 cups half and half
  • 4 cups cheddar cheese grated
  • 2 cups Gruyere cheese grated
  • ¾ tbsp Kosher salt
  • ½ tsp black pepper
  • ¼ tsp paprika

Method
 

  1. Preheat oven to 325°F and light grease a baking dish. Set aside.
  2. Bring a large pot to a boil. Add salt, when boiling, add dried pasta and cook for 15 minutes.
  3. Grate cheeses and mix them. Divide them into 3 piles. 3 cups will be used for the sauce. The rest will be used on top.
  4. Drain pasta and pour a bit of olive oil to prevent sticking.
  5. Melt butter in a saucepan over medium heat. Sprinkle in flour and cook for 1 minute while stirring. Add in half and half, whisk until smooth.
  6. Whisk until thick consistency. Remove from heat and stir in salt, black pepper, and paprika. Add in cheeses slowly, until the mixture is melted and smoothed.
  7. In the macaroni pot or a large bowl, combine drained pasta with the sauce. Stir until it's fully combined. Sprinkle the top with more cheese and bake in oven for 15 minutes.
  8. Serve.
