Lentil Soup

Ingredients
  

  • 1 cup dried lentils
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 6 cups chicken broth
  • 1 tbsp olive oil
  • 1 tsp cumin
  • ½ tsp paprika
  • salt and pepper to taste

Method
 

  1. Rinse the lentils and pick out any stones or debris.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the onion and garlic, and sauté for 3 minutes until fragrant.
  4. Add the carrots and chopped celery, and cook for another 2-3 minutes.
  5. Add the lentils, cumin, paprika, salt, and pepper, and stir to combine.
  6. Pour in the chicken broth and bring it to a boil.
  7. Reduce the heat to low and allow the soup simmer for 35 minutes until the lentils are tender.
  8. Adjust the seasoning to taste.
  9. Serve hot, and enjoy!
