- Rinse the lentils and pick out any stones or debris.
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté for 3 minutes until fragrant.
- Add the carrots and chopped celery, and cook for another 2-3 minutes.
- Add the lentils, cumin, paprika, salt, and pepper, and stir to combine.
- Pour in the chicken broth and bring it to a boil.
- Reduce the heat to low and allow the soup simmer for 35 minutes until the lentils are tender.
- Adjust the seasoning to taste.
- Serve hot, and enjoy!
