What Is Fudge?
Throughout history, fudge has a rich history that is filled with tragedy and outrage. During the American Revolutionary War, fudge was first found on the menu for the newly formed Continental Congress. Although these places only served water, the General Assembly of the United States felt that the allure of fudge would inspire those in attendance. The profits from the sale of fudge were used to pay the salary of the Congress members.
How Is Fudge Made?
There are two main ways to make fudge, although both methods are used. One of them involves cooking chocolate in a pan and slowly melting it in the heat. This chocolate melting is called the fining process. It is very similar to making Dutch fudge, a popular product in Belgium.
The other is the reduction process. Fudge is reduced from the same heat as the fining process to the point where there is barely any chocolate left. It is then chopped and molded into fudge bars. There are several different recipes for reducing fudge. The consistency is usually runny and is the primary characteristic of fudge.
Fudge vs. Chocolate
There are distinct differences between fudge and chocolate. Chocolate, as you know, is made from cacao beans. Unlike chocolate, fudge contains mainly sugar. (Some fudge products, such as chocolate cream, may be high in fat or sugar, while others may contain less of both and have a more mellow taste than chocolate.)
Fudge usually is cooked, but many chocolate fudge recipes call for very little cooking. The finished product is called fudge. But chocolate-based fudge can also come frozen.
Adding natural sweeteners can be another factor in your fudge since it contains no added sugar. Fudge can be a much better choice than commercially prepared desserts containing refined sugar and artificial sweeteners.
Types of Fudge
Though both dark and milk fudge are delicious, chocolate fudge is most often associated with Christmas treats in the United States. The other kinds of fudge are pretty popular at Christmas time in other countries as well. Some of the most famous fudge comes from Pepperidge Farms. Their favorite fan favorites are Sweetest Choice chocolate fudge, Necco Wafer’s peppermint fudge, and Godiva dark chocolate fudge.
- 16 oz. milk chocolate or dark chocolate
- 3½ cups semi sweet milk chocolate or dark chocolate chips
- ¾ cup melted butter
- 1¼ cup marshmallow creme
- 4 cups sugar
- 1½ cups evaporated milk
- Combine the chocolate bar, chocolate chips, butter, and marshmallow in a large mixing bowl.
- In a saucepan, combine the sugar and the evaporated milk. Mix until well combined over medium heat. Stir for 3-4 minutes while boiling.
- Pour the cooked ingredients over the chocolate in mixing bowl little by little, repeat stirring until constantly smooth.
- Pour into a greased 9×13 glass baking dish. Cover tightly and refrigerate until hardened. Keep refrigerated until serving time.
