Thick Sugar Cookie Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter soften
  • 1 cup granulated sugar
  • 1 large egg
  • tsp pure vanilla extract

Method
 

  1. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In a large bowl, beat sugar and butter until it becomes smooth and creamy. Use a mixer, add egg and vanilla and continue beating in the mixer for 1 minute. Scrape and repeat the process to combine.
  3. Add the dry ingredients to the mixer and mix on a low setting until combined. Make sure dough is soft before rolling.
  4. Divide the dough into 3 parts. Take a rolling pin and roll out the dough until it reaches 1/4 inch thickness. If dough sticks, use more flour.
  5. Place rolled-out dough on sheets of parchment paper, sprinkle flour on the dough and cover with plastic wrap. Refrigerate for 2 hours.
  6. Preheat oven to 350°F. Line 2 baking sheets with parchment paper and remove the chilled dough from the refrigerator. Cut the dough into shapes and re=roll the remaining dough to make more cookies.
  7. Place cookies on baking sheets and bake for 13 minutes or until lightly browned. Remove from oven and let the cookies sit for 5 minutes before transforming onto a wire rack.
