Method
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat sugar and butter until it becomes smooth and creamy. Use a mixer, add egg and vanilla and continue beating in the mixer for 1 minute. Scrape and repeat the process to combine.
- Add the dry ingredients to the mixer and mix on a low setting until combined. Make sure dough is soft before rolling.
- Divide the dough into 3 parts. Take a rolling pin and roll out the dough until it reaches 1/4 inch thickness. If dough sticks, use more flour.
- Place rolled-out dough on sheets of parchment paper, sprinkle flour on the dough and cover with plastic wrap. Refrigerate for 2 hours.
- Preheat oven to 350°F. Line 2 baking sheets with parchment paper and remove the chilled dough from the refrigerator. Cut the dough into shapes and re=roll the remaining dough to make more cookies.
- Place cookies on baking sheets and bake for 13 minutes or until lightly browned. Remove from oven and let the cookies sit for 5 minutes before transforming onto a wire rack.
