Ingredients
  

  • 3 cups all-purpose flour
  • 1 ½ tsp salt
  • 1 tbsp sugar
  • 1 tbsp active dry yeast
  • 1 ¼ cups warm water
  • 2 tbsp olive oil

Method
 

  1. Quickly combine the flour, salt, sugar, and yeast in a large bowl.
  2. Add the warm water and olive oil, and stir until a shaggy dough forms.
  3. Place the dough onto a lightly floured countertop and knead for about 9 minutes or until the dough is smooth and elastic.
  4. Cover the dough in a clean, oiled bowl with a damp towel. Allow the dough rise in a draft-free place for about an hour or until it has doubled.
  5. Preheat your oven to 500°F and place a pizza stone or baking sheet on the bottom rack.
  6. Punch down the bread dough and divide it into eight equal pieces. Roll each piece into a ball and let them rest for about 10 minutes.
  7. Roll out each ball into a flat disk about 1/4 inch thick.
  8. Place the disks on the hot baking sheet or pizza stone and bake for about 5 minutes until they puff up and are lightly browned.
  9. Remove the pitas from the oven and let them cool on a wire rack.
