Ingredients
  

  • 2 lbs ground beef
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 cans diced tomatoes
  • 1 can tomato sauce
  • 2 cans kidney beans drained and rinsed
  • 1 can corn drained
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

Method
 

  1. In a large pot, brown the fresh ground beef over medium-high heat, breaking it up with a spoon as it cooks.
  2. Add chopped onion and minced garlic and cook until softened about 5 minutes.
  3. Add the diced tomatoes, tomato sauce, beans, corn, chili powder, cumin, smoked paprika, salt, and black pepper.
  4. Bring the mixture to a simmer and let it cook for at least 30 minutes, stirring occasionally.
  5. Taste the chili and adjust the seasoning if necessary. I suggest adding more chili powder or salt, depending on your preferences.
  6. If desired, serve the chili hot, garnished with shredded cheese, sour cream, or chopped scallions.
