Gluten-Free Pasta Factors
There are a few important factors to consider when choosing a gluten-free pasta. The first is its ingredients; just because it’s gluten-free does not mean it’s dairy or soy free. Most products should fit your requirements if you don’t have to worry about these other allergens. Nonetheless, it’s important to double-check the ingredient makeup of the pasta to see if it’ll provide more or less protein and fiber than its wheat counterpart.
The next factor you should remember while purchasing gluten-free pasta is its texture. Some of these products can easily break apart and turn into mush. This is because the base ingredient does not feature components that make the pasta elastic. You can avoid this by picking a legume-based product. Peas and beans offer better gluten-free texture; if you prefer corn, rice, etc., make sure the product has xanthan gum in the list of ingredients because it has binding characteristics.
