Chili Without Beans Recipe

Ingredients
  

Chili

  • 2 tbsp olive oil
  • 2 lbs. Halal ground beef
  • 1 red onion diced
  • 1 green bell pepper diced
  • 28 oz diced tomatoes 1 can, undrained
  • 2 cups beef broth
  • 2 bay leaves
  • salt and ground black pepper

Seasoning Mix

  • 5 cloves garlic (4 Tbsp.) minced
  • 2 tbsp chili powder
  • 2 tsp onion powder
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 6 oz tomato paste 1 can

Instructions
 

  • Heat oil in a pot over medium-high heat.
  • Add ground beef to pot, season with salt & pepper, cook until brown. Crumble beef with spatula.
  • Add onions, bell pepper, and garlic to the pot with browned beef.
  • Cook for 4 minutes or until the vegetable are softened.
  • Stir in chili powder, onion powder, cumin, dried oregano, and paprika.
  • Add tomato paste, stir to combine and cook for 4 minutes.
  • Stir in diced tomatoes.
  • Stir in beef broth, scrape the bottom of the pot to stir.
  • Add bay leaves and bring chili to simmer. Reduce heat and continue to simmer for 30 minutes. Stir occasionally.
  • Remove from heat, remove bay leaves, and add salt & pepper to taste.
  • Serve.
  • Optional: Garnish with cheese, sour cream, or cilantro.
